War Cake

This is a delicious cake that Bill Johnston's (another former Cove resident) paternal grandmother baked for Bill and his brother when they were boys. It dates back to the First World War and contains no eggs or butter because these items went to the troops. I received the recipe as a Christmas gift in 2001 and have enjoyed making it ever since.

 

1 cup granulated sugar
2 tbsp. shortening
1 1/2 cups cold water
1 cup raisins

Preheat oven to 350 degrees.

Put above ingredients in a saucepan and boil for 5 minutes.

Cool and add:

2 cups flour
1 heaping tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1/4 tsp. salt

Transfer to a greased 8x8 inch baking pan. Bake 30 minutes at 350 degrees.

Serve topped with vanilla ice cream.
