Silverado MeatloafFrom Barbara Bream1 egg ¼ tsp pepper ½ tsp EACH basil, oregano and salt 1 ½ lbs lean ground beef ½ lb ground pork l large onion, chopped 2 cloves garlic, crushed 1 C corn kernels 1 C bread crumbs 2 cans (2 ¼ oz) sliced black olives, drained 24 oz can tomato sauce 3-4 slices bacon, partially rendered Preheat oven to 350 degrees. In a large bowl, mix egg, pepper and herbs. Add all remaining ingredients except tomato sauce and bacon and mix thoroughly. In a 9 X 13 inch pan shape mixture into a 6 X 10 in. loaf. Pour tomato sauce over loaf and lay bacon slices on top. Bake uncovered for 1 hour and 15 minutes.
