Oven Baked Potatoes

6 medium-sized baking potatoes
Extra-virgin olive oil
Pepper
3 cloves garlic, pressed or minced
2 sprigs fresh rosemary

Preheat oven to 400 degrees.

Peel and cube potatoes. Place in mixing bowl. Add pepper to taste and the pressed garlic. Remove rosemary from its stalk and chop the rosemary. Add to potato mixture. Add just enough olive oil to the potato mixture to generously coat the potatoes.

Pour mixture into a 9x13 inch glass cake pan. Bake at 400 degrees until potatoes are soft and brown. Baking time varies greatly by oven, but will generally be approximately 40 to 60 minutes.
