Kellogg's Bran Flake MuffinsFrom Helena Kish
Every time we went to visit my mother-in-law, she would have a batch of these in the oven. Invariably, they were all gone by the time we left! Enjoy these muffins guilt-free!
1 1/4 cups all-purpose flour Preheat oven to 400 degrees In large mixing bowl, combine cereal and milk. Let stand 2 minutes or until cereal softens. Add egg and oil; mix well. Add flour mixture, stirring only until combined. Portion batter evenly into 12 lightly greased 2 1/2 inch muffin-pan cups. Bake for about 18 minutes or until lightly browned. Serve warm. each muffin has 170 calories, 2 g dietary fiber, 6 g fat. For muffins with reduced fat, sugar and cholesterol: Use 2 Tbls. sugar, 2 Tbls. vegetable oil, skim milk and 2 egg whites for 1 egg. each muffin has 120 calories, 2 g dietary fiber, 2 g fat, less than 1 mg cholesterol.
