Oyster Leek Potato Dinner for OneFrom Phyllis Partridge
This makes a quick, easy and delicious dinner for you. And with just a bit more time, it can be an elegant addition to your dinner party! 1 potato 1 leek 1 onion butter white wine tarragon 2 shelled oysters Preheat oven to 375 degrees Bake or parboil a potato. Scoop out insides, mash. Sauté a chopped leek and some chopped onion in butter; add a little white wine and tarragon and simmer about 10 minutes; mix with potato. Fill shells and top each with an oyster. Bake at 375 degrees for 5 minutes. For a fancier meal garnish with julienned ham strips and béarnaise sauce.
