Mrs. Nielson's FudgeFrom Christine Friedrich
I hate fudge because it's
generally too gritty and sugary, but this is my favorite candy. The recipe
is from Mrs. Nielsen, a childhood neighbor. A diabetic, Mrs. Nielsen made
the most delectable candies for the rest of us to enjoy. It was a tradition
in our small farming village that on Christmas Eve we all made the rounds
going door-to-door to drop off a box of Christmas candy and cookies that
we'd made. Each house gave us a shot glass of their best Christmas cheer and
shared a plate of the candy and cookies that they had made. Mrs. Nielsen's
Fudge was always the best. When we moved to Minnesota in 2002, my niece,
Kathleen, and I began making it together each Christmas. It definitely helps
to have help to have an extra set of hands to aid in the lengthy stirring
process.
Boil together in a heavy pan: 1 3/4 c. granulated sugar 1/4 c. brown sugar 2 c. heavy whipping cream 1 c. pecans, cut on a slant 1 tsp. vanilla Cook, stirring constantly, to the soft ball stage (about 50 to 55 minutes). Remove from heat, beat for 5 minutes to cool--until the fudge is smooth.
