Food Processor BreadFrom Phyllis Partridge
3 c flour 1 tbsp dry yeast 1 tbsp sugar 1 tbsp oil 1 tsp salt about 1 c warm water
Preheat oven to 400 degrees.
Put all ingredients in processor bowl; process for 30 – 60 seconds. Dough should form ball and clear bowl sides; water or flour may need adjusting.
Let rise till double.
Process a few seconds; let rise again.
Process to reduce bulk, turn out and shape loaf – in a greased bread pan, or as a long or round loaf on a greased cookie sheet.
Bake about 20 min. Reduce temperature to 350 for another 15 – 20 min. Cool on rack.
I also use this as a basis for foccacia or pizza dough.
