Double acting powders, by far the most commonly available, (Calumet, Clabber Girl) contain aluminum salts. While probably not enough to be of concern, many people prefer to avoid aluminum. More important to people like me is that quick breads made with double-acting powder have a bitter metallic taste. This may be a genetic trait; not everyone is sensitive. Single acting baking powder nearly vanished from the marketplace, but is making a comeback; Safeway now carries Rumford. Canada has Magic; I’m sure health food stores have others. You can make your own – 2 tsp cream of tartar and 1 of baking soda for each cup of flour – or sour some milk with vinegar or lemon juice, and use baking soda alone. Have a recipe to share?
