Artichoke NibblesFrom Fritzi Schoen
2 jars (6 oz. Each) marinated
artichoke hearts I small onion, finely chopped Drain marinade from 1 jar of the artichokes into a frying pan. Drain other jar and save marinade for a salad. Chop all the artichokes; set aside. Add onion and garlic to frying pan, sauté until onion is limp, about 5 minutes. In a bowl, beat eggs with fork.
Add crumbs, salt and pepper and rest of seasonings. Stir in cheese, parsley,
artichokes and onion mix. Turn into greased 7x 11 baking pan. Bake at 350 for
30 minutes. Makes about 5 dozen. This
