Artichoke Nibbles

2 jars (6 oz. Each) marinated artichoke hearts                 I small onion, finely chopped
1 clove garlic,  minced                                                      4 eggs, beaten
1/4 cup fine dry bread crumbs                                          1/4  tsp salt
1/8 tsp. Each pepper, oregano, liquid hot sauce`               2 Tbsps.  minced parsley
1/2 lbs. Sharp cheddar cheese – shredded, about 2 .cups

Preheat oven to 350 degrees

Drain marinade from 1 jar of the artichokes into a frying pan. Drain other jar and save marinade for a salad. Chop all the artichokes; set aside. Add onion and garlic to frying pan, sauté until onion is limp, about 5 minutes.

In a bowl, beat eggs with fork. Add crumbs, salt and pepper and rest of seasonings. Stir in cheese, parsley, artichokes  and onion mix. Turn into greased 7x 11 baking pan. Bake at 350 for 30 minutes.

Let cool in pan – cut into 1 inch squares. Serve cold or reheat in pan at 325 for 10-12 minutes. 

Makes about 5 dozen. This freezes well for the think ahead chef !
